# Soak the beans overnight in cold water and the bicarbonate of soda# The following day transfer the beans and the liquid into a large saucepan# Add a quarter pint (125ml) cold water, bring to the boil and simmer gently for one and a half to two hours, making sure the beans do not break up# Drain and put into a basin# Cut off 2 slices of the onion for garnish and roughly chop the rest# Place the garlic into a bowl and add the vinegar, oil, salt and pepper# Mix well and pour over the hot beans before adding the chopped onions# When the dish has cooled a little garnish with onion rings
